Another quick and easy high protein recipe from Scott Baptie Food for Fitness.

  • Chicken Breast, 600g
  • Onion Powder, 1 tsp
  • Garlic Powder, 1 tsp
  • Black Pepper, a few grinds
  • Corn Flour, 20g (4 tsp) for chicken; 5g (1 tsp) for sauce
  • Coconut Oil, 1 tbsp
  • Garlic puree, 10g
  • Ginger puree, 10g
  • Reduced salt Soy Sauce, 2 tbsp
  • Honey, 50ml
  • Chicken Stock, 200ml
  • Sesame Oil, 10ml
  • Spring Onions, for garnish

Pop the chopped chicken breast into a freezer bag along with the onion powder, garlic powder, black pepper and 20g (4 tsp) corn flour. Shake until the chicken is completely coated.

Heat the coconut oil on a medium/high heat and add the chicken. Cook until crispy, golden and fully cooked. Remove from pan and set aside.

Add the garlic puree, ginger puree, soy sauce, honey, chicken stock, sesame oil and corn flour (add a splash of water to the corn flour first) to the pan and simmer on a high heat for a few minutes, allowing the sauce to reduce and thicken.

Return the chicken back to the pan and coat with the sauce.

Serve and enjoy!
